The Alto Beni, Bolivia beans that Volker provides are delicious. No other word for them. They are clean, well processed and the genetics are fantastic.

So why sugar it down too much?

Good question. So I started playing around with higher percentage bars with these beans and 85% seemed to be a sweet spot (sorry for the pun, couldn’t resist).
